Warm Chia Pudding - 1 cup plant based milk - 3 tbsp chia seeds - 2 tbsp ground flax - 1 apple diced (can also do frozen berries / banana…) - Dash of cinnamon, cardamom (optional)
1. Heat milk in a small sauce pan 2. Add in all ingredients, stir 4. Allow to simmer for about 5 mins, stirring occasionally, until pudding consistency is formed 5. Add any toppings of choice (I like yogurt, figs & walnuts)
Fall Pasta Salad - Veggies of choice (I did sweet potato, broccoli and brussel sprouts) - 1 diced red onion - 1 cup chickpea pasta (or pasta of choice) - 1/2 cup dried cranberries - 1/2 cup halved pecans - Crumble of feta goat cheese
Maple Vinaigrette - 2 tbsp extra virgin olive oil - 1 tbsp apple cider vinegar - 1 tbsp maple syrup - 1 tsp dijon mustard - Salt & pepper to taste
