The most widely planted, indigenous variety of Cyprus and one of the two involved in the production of Commandaria and Zivania. Mavro has a medium body and gives table wines, not suitable for aging, wines with moderate colour density, mild acidity, mild aromas, and light taste.
It tastes slightly astringent and has many tannins and a distinctive aroma and colour. It produces rosé wines with aromas of cherries and strawberries, light reds with aromas of red and black fruits, and in combination with other red varieties, gives complex, aromatic reds with medium body and tannins making it ideal for summer consumption. Great with juicy burgers, grilled meats, pasta with tomato sauce, chicken, and fish grilled or baked.
