我要做冬,蒸避風塘鮑魚
材料:
新鮮鮑魚(大)8隻
麪包糠2湯匙
蒜頭6粒
辣椒仔1隻
處理:
1. 用不鏽鋼羹從嘴部起出鮑魚肉,除去內臟。
2. 鮑魚,加生粉1湯匙,輕手捽乾淨,擎乾水。
3. 鮑魚殼,加入生粉1湯匙,刷乾淨。
4. 辣椒仔,打直1開2,去籽。
蒜頭,去皮,切碎。
辣椒仔,切碎。
烹調:
1. 慢火在鑊中燒熱油1湯匙。
2. 在鑊中加入蒜蓉爆香,推向鑊邊,熄火,擎乾油,蒜蓉放碗內。
3. 麪包糠,放鑊內,轉中慢火,炒至金黃色,熄火,加入辣椒仔,加入調味料:
a. 鹽少許
b. 黑椒少許
c. 糖少許
炒勻,放在蒜蓉內。
4. 大火煲滾1鑊水,大火蒸鮑魚3~4分鐘。
5. 蒸好,放蒜蓉在鮑魚上。
6. 完成,可享用。

Steam spicy garlic abalone in typhoon shelter style
Ingredients:
Fresh abalone (large) 8 Nos.
Bread crumbs 2 tbsp
Garlics 6 Nos.
Chili 1 No.
Preparation:
1. Take out flesh of abalone from its mouth with a stainless steel spoon. Remove intestines.
2. Abalone, add in 1 tbsp of tapioca starch. Rub it gently. Rinse thoroughly. Drain.
3. Abalone shell, add in 1 tbsp of tapioca starch. Brush it clean.
4. Chili, cut it vertically. Remove seeds.
Garlics, get them peeled. Chop well.

Steps:
1. Low flame, heat up 1 tbsp of oil in wok.
2. Add in garlic sauce in wok. Fry well. Push it to the edge of wok. Turn off fire. Drain the oil. Garlic sauce is to be put in a bowl.
3. Bread crumbs, is to be put in wok. Turn to medium~low flame. Fry it until it turns into the colour of golden yellow. Turn off fire. Add in chili. Add seasoning:
a. Salt little
b. Black pepper little
c. Sugar little
Fry well, put into the garlic sauce.
4. Heat up a wok of water at high flame. Steam the abalone at high flame for 3~4 minutes.
5. Steam well. Put garlic sauce on top of abalone.
6. Complete. Serve.
